James had always cooked the way most people cook.
In his kitchen, seed oils were normal. They sat in the cupboard, appeared in his favourite recipes, and made their way into almost every meal that needed frying, roasting, or a little extra richness. Fried chicken, chips, eggs, steak, popcorn — James loved food, and oil had always been part of that enjoyment.
Then one evening, while watching a YouTube show, he came across a discussion about modern seed oils. The speaker explained how many common oils go through extensive processing before they reach supermarket shelves — extraction, refinement, filtering, heating, and packaging — until what ends up in the bottle can feel far removed from the original seed or plant it came from.
At first, James was skeptical. These were the same oils he had used for years. They were affordable, familiar, and everywhere.
But curiosity stayed with him.
So he began doing more research. The more he read, the more he questioned whether the oils he had used for so long were truly aligned with the healthier, simpler lifestyle he wanted to build.
Still, James loved his food. He did not want to give up the meals that brought him comfort, family, and enjoyment. He simply wondered whether there was a better way to make them.
Even after learning more, James continued with his normal routine.
He still cooked with the same oils. He still enjoyed the same meals. Life went on, as it often does, even after we learn something that makes us question our habits.
But over time, he became more aware of how his body felt after certain meals. Heavy fried foods sometimes left him uncomfortable. His body felt more weighed down than it used to. He noticed that the fat around his midsection felt stubborn, and after some meals, especially fried ones, he sometimes felt swollen, heavy, or unsettled.
James had also dealt with a hernia in the past, which made him even more cautious about the foods he ate and how they affected him.
He was not trying to become extreme. He was not trying to abandon every food he loved. He simply wanted to enjoy his meals without feeling like his choices were working against him.
So he asked himself a simple question:
What can I change without giving up everything I enjoy?
That question became the beginning of his search.
James started looking for traditional alternatives.
He wanted something practical. Something that could handle heat. Something he could cook with. Something that felt closer to real food and less like a heavily processed modern convenience.
That was when he discovered beef tallow.
